Local Cuisine
Andalucia is the home of the tapa. The
tradition of serving small snacks to accompany your drink is very much alive, and some tapa bars offer extensive choices; from simple pieces of cheese, tortilla or chorizo to fried fish or squid.
One special favourite is the delicious jamon serrano (cured ham) from the Andalucian mountains. Tapa are traditionally washed down with fino sherry from Jerez.
Other dishes make great use of cumin, saffron and garlic. Chilled gazpacho soup suits the hot climate and, of course, fresh fish is plentiful.
