Lazio takes its name from the Latin people who were early inhabitants of the area.

It lies between the Appenine mountains in
the north and the flatter reclaimed Pontine marshes of the south, its fertile, volcanic soil supporting olives, vines and fruit.

Local Cuisine

Two of its most famous dishes are lamb and pasta and gnocchi alla romana. The spaghetti alla carbonara is hearty and rich. You will also find the peppery penne all’arrabbiata, made with garlic, tomatoes, and hot pepper.

Saltimbocca is thinly sliced veal with sage prosciutto.
